Harvest of Carrots

What do you do when your husband harvests your carrot crop for the year? You make up a batch of these tasty and healthy carrot muffins, that’s what! I was thrilled when Owen brought in our carrot harvest the other day. He said I should make a carrot cake, so I promptly got online to search for a carrot cake recipe. What I ended up finding was a delicious and healthy carrot cake recipe, which I revised to create these Healthy Carrot Muffins!

Holiday Season Healthy
Generally speaking, we eat pretty healthy foods in our house. Of course, we all like the occasional sweet treat. The holiday season tends to get us off-course for eating healthy every year. Owen and I both LOVE ham, so that is a no-brainer that we are going to have during the holidays that throws us off. We all also like cookies, candy, and the like. So, when he harvested our carrots the other day and suggested I make some carrot cake, these healthy carrot muffins were a great choice to stay in our normal healthy guidelines.
Sweet Treat Fix
Even though these muffins do not have any sugar, they have the honey and applesauce, giving them just the right amount of sweetness to curb your sweet tooth. They certainly did the trick for us, and we have had some major sweet tooth lately, LOL! If you are craving a sweet treat and still want to stay on track this early in the holiday season I REALLY recommend these healthy carrot cupcakes.
You could adapt these muffins in many different ways and still have a healthy and tasty treat. You could use half whole wheat flour and half regular flour. You could add some flax or chia seeds. You could use pecans or almost any kind of nut that you prefer. You could add raisins to the mix. You could use some mandarin oranges and some pineapple, or even some apricots. The possibilities are pretty endless.

I may have to break down and do the frosting next time though. Owen really likes frosting! So does Joy. I could do without it all together most of the time.
