Mashed Potatoes + Cauliflower
One evening I decided to sneak in some cauliflower when I made mashed potatoes for supper. What a great way to get some different nutrition for all of us! Adding the cauliflower gives the potatoes an extra kick of flavor as well. As usual, we had a bit of these left over, so I decided I wanted to make potato and cauliflower cakes with them.
Owen had a great idea to use them for something different. By combining our ideas, I created these DELICIOUS Northwest New Mexican Potato Cauliflower Cakes! I have searched extensively online, by the way, and have not found ANYTHING like these. I hope you try them and enjoy them as much as we do!
You start with leftover mashed potatoes (or mashed potatoes and cauliflower in this case), add a base, fire-roasted green chiles, then smoked salmon. It is a great twist on New Mexican and the great Northwest!By combining our ideas, I created these DELICIOUS Northwest New Mexican Potato Cauliflower Cakes! Lots of Options
When I made these for this post I used hummus and Neuchâtel cheese as my bases. You could use a number of things…really anything you like. For example, I am getting ready to make one of these for lunch and I am going to try plain greek yogurt as a base. I think it will work very well. Play around with flavors you like! Green onions or chives would be a great garnish for this dish as well.
