Northwest New Mexican Potato Cauliflower Cakes 2 Ways
The Pacific Northwest collides with New Mexico in this amazing potato cauliflower cake. Made two ways, using hummus, or Neufchatel cheese topped with green chile sauce and smoked salmon, you cannot go wrong with this delightful dish. Your taste buds with love you for this and you will make it again and again!

  1. Boil your potatoes and cauliflower until fork tender.
  2. Mash the potatoes and cauliflower together the same as you would make mashed potatoes.
  3. Add an egg to the mashed potatoes and cauiliflower to bind them well. Then fry them until brown and crispy in grapeseed (or your choice) oil. Let the cakes cool completely.
  4. Once the cakes are cool, assemble one (or however many you need). First, add the base spread. I used hummus on one of mine.
  5. Here is the other I made using Neufchatel cheese as my base. Both options are delicious. Anything you would like that is similar would be great.
  6. Add your fire-roasted green chile on top of the spread.
  7. Add your smoked salmon on top of the chile.
  8. You could add a chopped green onion or chive now. Salt and pepper to taste and ENJOY!
