Simple Joy – Making Chocolate Chip Bars

We are right in the middle of the wonderful holiday season.  Christmas has been my favorite holiday as long as I can remember.  I am trying to share this love of the holidays with Joy.  During this time of year, especially, I am trying to keep in mind to enjoy the “simple joys” in life.

Simple Joys

Things like snuggling under warm blankets, building with blocks with Joy (which she LOVES and always wants to build the blocks tall), watching a Christmas movie, sharing a cup of hot cocoa together as a family are just some of the simple things that we love doing together during the holiday season.

These are the things that truly matter. Family, love, kindness, sharing, peace, joy, comfort... We need to count our blessings and keep watching for the simple joys to hold in our hearts. On the same night, we made these tasty chocolate chip bars, we shared hot cocoa together.  It was Joy’s first cup of hot cocoa (ok, it really was warm cocoa).  LOL.  But it was so much fun sitting together and watching her try cocoa for the first time!  She LOVED it, by the way…who doesn’t?

My point is that we always need to remember to not get stressed out about things in life that do not matter (a LOT of things fall onto this list, believe it or not!).  We need to count our blessings and keep watching for the simple joys to hold in our hearts.  These are the things we will reflect on at the end of our lives.  These are the things that truly matter.  Family, love, kindness, sharing, peace, joy, comfort…

Helping Mommy Make Chocolate Chip Bars

I must have just thought chocolate chip cookies sounded good, so I started searching in my recipe box.  I came across my Mom’s recipe for Chocolate Chip Bars (Thanks, Mom!) and thought it would be fun to make with Joy.  Boy was I right!  She LOVED helping add ingredients to the bowl, stirring, and spreading out the dough in the pan.  She really loves helping me do most things, but especially doing things in the kitchen.  It is so wonderful to watch her grow up enjoying baking, putting dishes away (at least for now), cooking, and other fun things.

Instructions
  1. Heat oven to 375 degrees
  2. Grease & flour a 9x13x2 inch pan.
  3. Mix sugars, butter, and vanilla.
  4. Beat in egg.
  5. Stir in flour, baking soda, and salt.
  6. Mix in nuts and chocolate chips.
  7. Spread dough into the pan. It will be thick. I found using my hands is the easiest way to get this done.

  8. Bake until light brown (12-14 minutes).
  9. Cool and cut into bars about 2 x 1 1/2"
