Eating Healthier in 2018
In an effort to help my family eat more healthy foods in 2018 moving forward, I have been seeking out some great new recipes to try. This one I modified from one that I came across the other day and it turned out wonderfully if I do say so myself!
I think adding some Greek yogurt to these would be great as well, so I may have to try that soon! Any fruit you like would go well in these such as blueberries or even cut up strawberries.
Who doesn’t love a good hearty pancake for breakfast on occasion? I know my family certainly does. In fact, Joy had two of these healthy pancakes with honey on them today!
I am going to have to make a double batch of these just to freeze soon so we always have them available. Much to my delight, these pancakes freeze VERY well. I popped one in the toaster for Joy this morning and it turned out great. I actually ate two of them as well. These are so good!
Update: I made another batch of this batter yesterday and finished frying up some of these today (2/1/18). After Joy had eaten one and Owen had eaten one I decided that the only way to keep these in the freezer is going to be to make a quadruple batch after they go to bed! This is becoming a staple breakfast and snack in our house. Owen and Joy both love these with peanut butter too!
